This calculator requires the use of Javascript enabled and capable browsers. This script creates a guideline as to quantity or amount of standing prime rib beef, potatoes, mushrooms and onions, and gravy needed for a specified special dinner. Enter the number of adults that are having dinner and the number of children that are to be fed. Select the quantity of leftovers you desire and the anticipated appetites of those dining. Then click on Calculate. The approximate amount of beef (with or without ribs) is calculated along with the appropriate quantity of side dishes and gravy for serving, either brown beef gravy or au jus, but probably not both.
The cooking process for the oven should be selected for slow cooking, normal cooking or faster cooking times. The temperatures are given in the calculator. Cooking times are for rare to medium rare beef; adjust slightly for rare, medium and well done. For the faster cooking times, preheat the oven to 425 prior to placing beef in the oven; drop it back to the indicated temperature when beef is put in. Cook uncovered.
